Pumpkin Chocolate Chip Cookies

Who doesn't love the warm, cozy flavors of fall? With the leaves changing colors and a slight chill in the air, it's the perfect time to indulge in some delightful pumpkin treats. And what better way to embrace the season than with a batch of Pumpkin Chocolate Chip Cookies? Packed with the goodness of pumpkin and the sweetness of chocolate chips, these cookies are a must-try for any fall baking enthusiast!
Ingredients You'll Need:
3 tablespoons of canned pumpkin puree
2 eggs
1 cup granulated sugar
1 cup brown sugar
1 cup softened, unsalted butter
1 tablespoon pumpkin spice flavor extract
3 and 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon ground cinnamon
1 tsp cloves
1 tsp all-spice
1 teaspoon salt
2 cups semi-sweet chocolate chips
Instructions:
Preheat and Prepare : Start by preheating your oven to 375°F (175°C) and lining a baking sheet with parchment paper.
Mix Wet Ingredients : In a large mixing bowl, cream together softened butter with brown sugar and granulated sugar. Then add in the pumpkin puree an pumpkin spice extract (optionally you can add a few drops of orange food coloring for a deeper orange color). Mix until well combined.
Incorporate Dry Ingredients : In a separate bowl mix together the flour, baking powder, baking soda, cinnamon, cloves, allspice and salt, stir together well! Then add the dry ingredients to the wet and ingredients and stir until fully incorporated.
Add Chocolate Chips : Gently fold in the chocolate chips until they are evenly distributed throughout the cookie dough.
COOLING TIME : Before baking allow the cookie dough to cool in the fridge for 30 minutes
Shape and Bake : Using a cookie scoop or spoon, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them a few inches apart. Flatten slightly with the back of a spoon.
Bake and Enjoy : Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
