Homemade No-Churn Lemon Cheesecake Ice Cream for a Magical Summer Treat!

No ice cream maker needed! This creamy lemon cheesecake ice cream is the perfect addition to any cozy summer night, whether you're hosting, looking for a recipe to make with your kids or wanting to create something special for yourself! With just a few simple ingredients and a touch of magic, you can whip up a delicious and decadent treat that will have you coming back for seconds.


Ingredients You’ll Need:


  • 2 cups heavy whipping cream

  • 1 can sweetened condensed milk (14 ounces)

  • Zest of 1 lemon

  • 1/2 cup of lemon curd (you can make your own, but I use store bought)

  • 8 oz cream cheese, softened, room temperature

  • 1 tbsp of sugar

  • 2 tbsp vanilla extract

  • 8 Graham crackers, crushed

  • 3 tbsp of melted butter cooled to room temperature

  • 2 tbsp of brown sugar

  • 2 cups of chopped golden Oreos


Step-by-Step Guide to Ice Cream Paradise:


  • Whip it Up: In a bowl, whip the heavy cream with 1/2 of the condensed milk (7 ounces) until stiff peaks form, put this in the fridge to keep cool while you do the next step.

  • The Zest: In a separate bowl mix together the rest of the sweetened condensed milk (7 ounces), the lemon zest, cream cheese, and vanilla.

  • The "Cheesecake": Take the whipped cream out of the fridge and gently fold the cream cheese mixture into the whipped cream and combine well.

  • The "Crust": In a separate bowl mix together the crushed graham crackers, melted butter and brown sugar

  • Swirls: Gently swirl in the lemon curd, then HALF of the graham cracker mixture and lastly fold in the golden Oreos

  • Freeze the Magic: Pour the mixture into a freezer-safe container, smoothing the top with a spatula.

  • The Finale: Sprinkle the other half of the crushed graham crackers on top, adding a delightful crunch to each scoop.

  • Chill Time: Cover the container and let it freeze for at least 8 hours, or overnight and enjoy!
