Cheesy Zucchini Fritters: A Simple Summer Harvest Dinner Idea

As we approach autumn its a perfect time to reflect on all we have learned and gained during the summer season. This is the time of year where gardens overflow and we have a bounty of gifts from the Earth. These zucchini fritters are an easy dinner recipe and a tasty way to honor this special season.



Ingredients:


  • 4 cups shredded zucchini

  • 1 tablespoon salt

  • 1 cup shredded cheddar cheese

  • 1/4 cup chopped green onion

  • 1 cup all-purpose flour

  • 1/4 teaspoon baking powder

  • 1 1/2 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 tablespoon minced garlic

  • 2 large egg

  • 2 tablespoons of oil


Instructions:


  • Prepare the Zucchinis :Grate the zucchinis using a box grater or a food processor. Place the grated zucchinis in a colander, sprinkle with salt, and let them sit for about 10 minutes. Squeeze out the excess moisture using a clean kitchen towel.

  • Mix the Ingredients :In a mixing bowl, combine the grated zucchinis, cheddar cheese, chopped green, flour, baking powder, garlic powder, minced garlic and black pepper. Mix well until all ingredients are evenly incorporated.

  • Add the Egg :Crack the eggs into the zucchini mixture. Stir until the egg is well combined, and the mixture holds together.

  • Form the Fritters :Heat olive oil in a large skillet over medium heat. Scoop about 1/4 cup of the zucchini mixture and gently flatten it into a patty. Place it in the skillet and cook for 2-3 minutes on each side until golden brown and crisp.

  • Serve and Enjoy :Once the fritters are cooked to perfection, transfer them to a plate lined with paper towels to absorb any excess oil. Serve warm with a dollop of sour cream or your favorite dipping sauce.
