Cinnamon Roll Pancakes, the perfect Autumn Breakfast Treat

The comfort, cozy feel of homemade cinnamon rolls in half the time! These delicious pancakes are the perfect treat to accompany a warm mug of coffee on a chilly autumn morning!


Ingredients You'll Need:


For the Pancake Batter:

  • 2 cups all-purpose flour,

  • 1/4 cup of sugar

  • 4 teaspoons of baking powder

  • 1/2 teaspoon salt

  • 1/8 tsp of baking soda (or 1/4 tsp of baking soda for fluffier pancakes)

  • 1/4 teaspoon of cinnamon

  • 1 tablespoon vanilla

  • 1 and 3/4 cup milk

  • 1 large egg

  • 4 tablespoons melted unsalted butter


For the Cinnamon Swirl :

  • 1/2 cup unsalted butter melted

  • 1 cup brown sugar

  • 2 tablespoon ground cinnamon


For the Cream Cheese Glaze :

  • 3 ounces cream cheese softened

  • 1 and 1/2 cup powdered sugar

  • 1 and 1/2 teaspoon vanilla extract

  • 6 tablespoons melted butter


Instructions:


  • Prepare the Pancake Batter :In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon and salt. In a separate bowl, mix the milk, egg, vanilla, and melted butter. Combine the wet and dry ingredients until just mixed. Do not overmix.

  • Make the Cinnamon Swirl :In a small bowl, combine the melted butter, brown sugar, and cinnamon. Transfer the mixture to a squeeze bottle or a plastic bag with a corner snipped off.

  • Cook the Pancakes : Heat a non-stick pan over medium heat and lightly grease with butter. Pour a ladle of pancake batter onto the pan. Drizzle the cinnamon swirl mixture in a spiral motion on top of the pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.

  • Whip up the Cream Cheese Glaze :In a bowl, beat the softened cream cheese until smooth, stir in melted butter until well combined and then stir in vanilla. Lastly slowly add in powder sugar and mix until smooth

  • Serve and Enjoy! :Stack the cinnamon roll pancakes on a plate and drizzle with the creamy glaze. Optionally, sprinkle with extra cinnamon for a finishing touch.
