Apple Cider Donut Cake & Blessed Mabon!

Blessed Mabon! This is such an exciting time of the year and the perfect time to reflect with gratitude on the abundance of the season. Mabon is the time when day and night are balanced and we are transitioning from the warmth and long days of Summer to the cool and comforting Autumn weather. Mabon is a time to practice gratitude and to let go of the things that no longer serve you. Simple ways to celebrate Mabon are to clean your space and decorate for Autumn, make a simmer pot with apples-oranges-cloves-cinnamon-etc., go apple picking, donate to a food bank, or make a feast using the flavors of the season! We love celebrating Mabon in our home with the flavors of fall and a small feast of comforting food. This Apple Cider Donut Cake is a wonderful way to kick off the season and celebrate Mabon.
Ingredients:
The Cake
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon cloves
1 teaspoon allspice
1 cup canola oil
1 cup sour cream
1 cup granulated sugar
1 cup brown sugar
3 large eggs
1 tablespoon vanilla extract
1 cup apple cider
The Icing
3 cups powder sugar
1/2 cup apple cider
Instructions:
Preheat your oven to 325°F (180°C) and grease a bundt cake pan (9.5 inch to 10 inch)
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, allspice, cloves and nutmeg.
In a separate large bowl, cream the oil, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract, sour cream and apple cider.
Pour the wet ingredients over the dry ingredients and mix well
Prepare the bundt cake by lightly greasing it and pour the batter into the bundt cake
Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
While the cake is cooking you will want to make the icing, in a bowl mix together the 3 cups of powder sugar with the 1/2 cup of Apple Cider and mix until smooth
Let the cake cool for 10 minutes before transferring to a wire rack to cool completely .
While the cake is cooling you will want to pour the icing over top the cake and enjoy!
